Easy Sweet Potato Pancakes

2 cup sweet potatoes mashed (about 2 medium potatoes, peeled and cooked)
4 eggs
1/2 to 1 teaspoon cinnamon (optional)

Combine the sweet potato, egg and cinnamon. Stir well. Lightly spray a skillet with non-stick spray and heat on medium heat. Pour about 1/4 cup of the batter into the pan. Cook about 3 to 4 minutes, or until pancakes begin to bubble in the center and the edges are dry. Carefully flip and cook for another 2 to 3 minutes. Once cooked, remove pancake from the pan and repeat the process until all the batter has been used. Grease the skillet as needed with non-stick spray in-between cooking the pancakes. Serve hot. Enjoy with your favorite toppings like maple syrup, honey, coconut butter, fresh fruit, or your favorite jam!

Panko Fried Chicken

1 (2#) bag boneless/skinless chicken breast
1 bag panko flakes
2 eggs, beaten
Garlic salt to taste
Black Pepper to taste
Olive oil for frying

Sprinkle chicken with garlic salt and pepper then dip in egg wash and roll in panko. Heat oil and fry until golden brown on each end, which should be about 5 minutes on each side. Then, when done frying, put chicken on paper towel, so it can soak off excess oil. Enjoy with rice or mash potatoes and some steamed veggies or a nice fresh green salad. Easy & ono! ENJOY! Egg Sandwich

8 large eggs
1/2 cup mayonnaise
1/4 cup chopped green onion
1 teaspoon prepared yellow mustard
1/4 teaspoon paprika
salt and pepper to taste

Place eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel, and chop.

Place chopped eggs in a bowl; stir in mayonnaise, green onion, and mustard. Season with paprika, salt, and pepper. Stir and serve on your favorite bread, crackers, or salad greens.

Easy Prime Rib Roast

1 boneless beef rib roast (4 1/2 lb.)
1 teaspoon coarse (kosher or sea) salt
1 teaspoon dried thyme leaves
1 teaspoon garlic powder
1/4 teaspoon coarse ground black pepper

Heat oven to 350 degrees. Line shallow roasting pan with foil. Place beef, fat side up, in pan. In small bowl, mix salt, thyme, garlic powder and pepper until well blended. Sprinkle and press herb mixture on roast.

For medium-rare, roast uncovered 1 hour 45 minutes to 2 hours 15 minutes or until meat thermometer inserted in center reads 135 degrees.

For medium, roast 2 hours 15 minutes to 2 hours 45 minutes or until meat thermometer inserted in center reads 150 degrees.

Cover roast loosely with foil; let stand 15 to 20 minutes before carving. Enjoy.

MOM'S BAKED HAM

1 (4 pound) fully-cooked spiral cut ham
1 (20 ounce) can sliced pineapple, drained with juice reserved
1 cup dark brown sugar
1 liter ginger ale

Preheat the oven to 350 degrees. Remove as much of the ham from the bone as you can. Layer one third of the ham in the bottom of a 6 quart casserole dish or baking pan. Top with a few pineapple rings and 1/4 of the brown sugar. Repeat the layers, ending with pineapple rings on top, but don't sprinkle the last 1/4 of brown sugar. Pour any juice left in the pineapple can over the ham. Then pour in enough of the ginger ale to fill the dish about half way. Sprinkle the remaining brown sugar over the top. Cover with aluminum foil and bake for 20 minutes then uncover and bake for an additional 20 minutes. ENJOY! (Mahalo mom for this recipe!)
